New Laws Regarding Poultry and Rabbit Exemptions are effective January 1, 2026
Poultry and Rabbit Exemption
An exemption can be obtained from the Illinois Department of Agriculture, Bureau of Meat & Poultry Inspection, for the slaughter and processing of poultry and rabbits.
- The exemption is effective for a period of two years, unless revoked.
- There is a limit of 7500 animals slaughtered and processed per calendar year.
- Products must be marked with farm name, address, and the statement "NOT INSPECTED-Exempt P.L. 90-492".
- Products may be sold:
-- On the premises where the exemption has been granted
-- Farmer's Markets
-- Roadside stands
-- Delivery to customer

To apply for the MPI Poultry & Rabbit Exemption, please submit:
- Completed MPI Poultry & Rabbit Exemption Request Form
- Current water test results showing that the water at the processing location is potable.
- A flow chart or diagram of the facility that also demonstrates the flow of the slaughter and processing procedure
- A written description of the process
